For all you aspiring mixologists out there, here’s a light and refreshing drink that I’ll be making for my get-together with the girls this weekend:
1 cup granulated sugar
1 cup water
1-inch piece ginger, peel removed* and cut into slices
Seltzer or club soda
Mint sprigs
Pomegranate juice
Ice, optional
In a small saucepan, bring sugar, water, and ginger to a boil. Turn off the heat until the pot is at room temperature and take out the ginger with a spoon or strainer.
Pour the cooled syrup into a glass until it’s about a quarter full, then top with seltzer and decorate with mint sprigs. Add a splash of pomegranate juice and more syrup if necessary.
*You can remove ginger peels with a vegetable peeler or by scraping the peel off with spoon.
