The Weekly Dish: Kale, White bean and Whole Wheat Pasta

If there’s anything I love to make in the kitchen, it’s this dish. It’s quick and easy and makes for a very filling meat-less meal. Try it and let me know what you think!

Kale, White Bean, and Whole Wheat Pasta

1/2 pound dry whole-wheat pasta
1 tablespoon olive oil
1 clove garlic, sliced
6 cups washed kale, stems removed, roughly chopped
Salt
1/2 teaspoon red pepper flakes
1 (14.5 oz) can white beans (cannellini or whatever you can find), drained
Shredded Parmesan cheese, optional

  1. In a medium pot with salted boiling water, add pasta and cook according to the directions on the package.
  2. Meanwhile, mix garlic and red pepper flakes in a large skillet over high heat. After a minute, toss in kale and stir (add some pasta water if the greens become too dry). Salt to taste. Cook for 1-2 minutes, add beans. Turn off heat and cover.
  3. Divide pasta into bowls. Top with greens and beans.

    Serves 4
